Saeutchim (Steamed Stuffed Pacific Prawns)

Ingredients:


12 large pacific prawns -- uncooked in the shell

1 small carrot -- very finely diced

2 bunch spring onions -- very finely chopped

1 large egg -- beaten

1 teaspoon sesame oil

1 teaspoon salt

1 teaspoon freshly ground black pepper
 

Preparation / Directions:


Remove the heads from the Pacific prawns and set aside. Very carefully slit the shells along the back, and remove the meat. Wash the empty shells and set aside. Remove the black vein from the prawns, then finely chop them. Mix the chopped prawn meat with the diced carrot, spring onions, beaten egg, and sesame oil. Season with salt and pepper. Stuff this mixture back into the shells carefully. Place in a steamer and steam for 10 minutes. Remove from the steamer and arrange carefully on a platter, replacing the heads of the prawns for decoration.
