Potatoes Provencale

10 large potatoes -- peeled and slice 1/8 inch, up to 12
10 ounces heavy cream
1/2 tablespoon black pepper
1 tablespoon garlic powder
1/4 cup parmesan cheese
4 medium tomatoes -- chopped, up to 6
6 ounces sour cream
1 teaspoon salt -- to taste
6 slices swiss cheese -- up to 8

Preparation / Directions:

Preheat oven to 450 degrees. Mix heavy cream and sour cream with salt, pepper and garlic powder in bowl with whisk. Toss potatoes and tomatoes in bowl to coat evenly. Place potatoes in casserole or baking dish, pouring any cream mixture left from bowl into casserole. Top with Swiss cheese. Cover and bake for approximately 45 minutes. Uncover and sprinkle with Parmesan cheese and bake uncovered until golden brown, about 5-8 minutes.
