Latke (Potato Pancakes)

Ingredients:


6 medium potatoes

1 large Onion -- large

4 large eggs

4 teaspoons matzo meal -- (rounded)

1/2 teaspoon salt and black pepper -- coarse ground

1 tablespoon olive oil
 

Preparation / Directions:


Finely grate ("rub") 6 potatoes and 1 large onion into a bowl. Thoroughly mix in eggs, matzo meal, salt, oil, and black pepper to taste. Cover bottom of frying pan with oil and heat up. Drop tablespoon of batter for each pancake. Drain on paper towels. Serve with sour cream (if a dairy meal) and applesauce. I have even used a little cream cheese on them.
