Sweet Potato Soup

Ingredients:


1 1/4 pounds sweet potato -- diced, peeled

3 medium carrots -- chopped

1 large celery stalk -- chopped

1 piece bay leaf

6 cups water

2 tablespoons lemon juice

1 teaspoon hungarian sweet paprika
 

Preparation / Directions:


Put all vegetables with the bay leaf in a soup pot. Add water and bring to a boil. Simmer for about one hour. Stir occasionally. Just befroe serving, add lemon juice and paprika. Remove bay leaf.
