My Mom's Double-Baked Potatoes

Ingredients:


9 large baking potatoes

1 pieces butter or margarine

16 ounces sour cream

9 slices bacon -- fried crisply and crumbled

1 teaspoon salt and pepper to taste

1 large egg
 

Preparation / Directions:


Scrub and poke potatoes and bake at 350 degrees for 1 to 1 1/2 hours. Cool and cut in half horizontally. Carefully remove the potato from skins. Mash potatos with butter until smooth,. Add salt and pepper and egg (egg makes the potato mixture puff when rebaked). Add the sour cream and mix. Stir in the bacon bits. Check for salt. Pile potato mixture into the skins. Put on cookie sheet and freeze. Next day, put the potatoes in baggies for easy storage. When ready to use, take out number of potatoes you need and sprinkle paprika on top. Bake in preheated 375 degree oven for 1/2 to 3/4 hour. Tops will be slightly browned. Note - These potatoes are one of my most requested recipes. While you do have to make them on a day when you are in the mood to be in the kitchen, having these potatoes in the freezer can make an ordinary dinner look like you have been cooking that day.
