Mashed Potatoes With Garlic

Ingredients:


2 cups russett potatoes -- peeled and cubed

1/4 cup water

2 cloves garlic -- minced

1/2 cup skim milk -- (or evaporated skim milk for creamier texture

1 tablespoon fresh chives

1 teaspoon salt and fresh ground pepper to taste
 

Preparation / Directions:


Combine potato, water and garlic in two-quart microwave safe casserole dish. Cover and microwave on high 11-13 minutes or until potatoes are tender. Stir every 5 minutes. Mash potatoes until smooth. Add milk to potatoes and beat on medium speed with mixer until smooth. Add chives and stir.
