French Style Potato Peaks

Ingredients:


3 medium baking potatoes -- baked

1/4 cup milk

2 tablespoons butter or margarine

1/4 teaspoon salt

1 dash pepper

1 tablespoon chopped chives

1/4 cup wish-bone chunky blue cheese dressing
 

Preparation / Directions:


1. Preheat oven to 400.

2. Cut each potato in half lengthwise; scoop out insides. In medium bowl, mash potatoes with milk, butter, salt, and pepper until smooth; fold in chives and chunky blue cheese dressing.

3. Fill each potato shell with mixture. Place on cookie sheet; bake 25 minutes or until golden.
