Curried Sweet Potato Wontons

Ingredients:


1 Tablespoon margarine or butter

1 cup diced peeled sweet potato

1/2 cup diced red bell pepper

4 medium green onions -- sliced

2 Teaspoon curry powder

1/4 Teaspoon salt

1 large egg

2 Teaspoon all purpose flour

1/2 cup vanilla yogurt

14 sheets wonton squares

2 Tablespoon margarine or butter melted
 

Preparation / Directions:


Heat oven to 350 degrees. Lightly spray 24 small muffin cups with cooking spray Melt 1 Tbs. margarine in a 10 inch skilled over medium low heat. Stir in sweet potato, bell pepper and onions. Cover and cook 3 to 5 min., stirring occasionally, untikl sweet potato is tender. Stir in curry powder and salt. Cool slightly. Beat egg and flour in medium bowl until smooth, beat in yogurt. Stir in sweet potato mixture. Brush one side of each wonton square with melted margarine . Press each square, margarine side up, into muffin cup. Spoon sweet potato mixture into wontons. Cover and refrigerate up to 8 hours. Bake 12 to 15 min or until wontons are golden brown and centers are set. 24 appetizers
