Chili-Cheese Potatoes

Ingredients:


3 medium baking potatoes -- unpeeled, 1/2 inch thick

1 tablespoon vegetable oil

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup parmesan cheese -- grated

1 cup cheddar cheese -- shredded

1 small green onion -- chopped (optional)

3 tablespoons fresh chives -- minced, up to 4
 

Preparation / Directions:


Combine potatoes and oil in a 12 x 8 x 2 inch baking dish; toss well. Sprinkle potatoes with chili powder, salt, and pepper. Cover tightly with plastic wrap and microwave about 15-18 minutes or until tender, stirring gently every 3 minutes. Sprinkle with cheese and onion and chives. Let stand, covered, 5 minutes.
