Chicken enchiladas in white sauce

This is the BEST enchilada recipe! Try it once-and your hooked. Chicken breast in creamy white sauce-rolled up in flour tortillas, yes flour.....
 

Ingredients:


7 pieces boneless/skinless breasts

2 can chicken broth

1 can diced green chilies

1 package flour tortilla (fajita size)

1 package jack cheese

1/2 cup mayo

1 cup sour cream

1 Tablespoon flour (use Wondra-no lumps!)

1 Tablespoon lemon pepper and garlic salt-to season breasts.

---PRE-HEAT OVEN TO 375*
 

Preparation / Directions:


season breasts generously w/lemon pepper and garlic. microwave breasts carefully-you want them done, but tender. dice into chunks-set aside. in large pot combine: broth, chilies, mayo and sr. cream-simmer 15 min then add chicken-simmer for 15 more. grate cheese (all of it) add a hand full of cheese and the tbsp flour-stir consistantly avoiding lumps-let cool. in 2x4 bake pan-using a laddle: 1 scoop/sm handfl cheese per tortilla. roll until pan is full, pour remaining sauce and cheese on top. bake @ 375 for 30 min.....ENJOY
