Pork Tenderloin Tequila

Ingredients:


1/4 cup mustard

2 pounds pork tenderloin

1/4 cup oil -- vegetable

2 cloves garlic -- halved

1/4 cup carrot -- chopped

1/4 cup lime juice

1/4 cup tequila

1 teaspoon salt

1 teaspoon oregano -- dried

1 teaspoon thyme -- dried

1/4 teaspoon pepper

4 medium tomato -- chopped

1 medium Onion -- chopped

1 piece bay leaf
 

Preparation / Directions:


Spread mustard over pork tenderloin. Heat oil and garlic in 10" skillet until hot. Cook pork in oil over medium heat until brown. Remove garlic. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simer until pork is done, about 30 min. Remove bay leaf.
