Ham Loaf With Golden Sauce

Ingredients:


1 pound ground fully cooked ham

1 pound ground pork

2 cups soft bread crumbs

1/3 cup pineapple juice

2 large eggs -- lightly beaten

1/2 cup chopped onion

1/4 cup packed brown sugar

2 tablespoons chopped fresh parsley

2 tablespoons cider vinegar

1/4 teaspoon ground cloves

---sauce

2 cups pineapple juice

3 tablespoons cornstarch

1 tablespoon brown sugar -- (up to 2)

2 teaspoons lemon juice

1/4 teaspoon ground ginger -- (up to 1/2)
 

Preparation / Directions:


In a large bowl, combine first 10 ingredients. Pack into a 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F. for 1-1/2 hours. Meanwhile, combine all sauce ingredients in a saucepan. Slowly bring to a boil, stirring constantly until thickened and translucent. Allow loaf to stand for 5 minutes. Remove loaf from pan and serve sauce over it.
