Cheddar Cheese And Ham Soup

Ingredients:


2 tablespoons butter

1 medium Onion -- finely chopped

2 tablespoons all purpose flour

2 cups canned low-salt chicken broth

2 cups regular or lowfat milk

1/2 pound regular or reduced fat ham -- cut into 1-inch cubes

1 1/2 cups grated sharp cheddar cheese

1/4 cup chopped fresh chives
 

Preparation / Directions:


Melt butter in heavy large saucepan over medium-high heat. Add onion and saute until tender, about 5 minutes. Add flour and stir 2 minutes. Gradually mix in broth and milk. Bring to simmer, stirring frequently. Simmer until thick, about 20 minutes. Stir in ham. Add cheese by handfuls, stirring until melted after each addition. Season to taste with salt and pepper. Ladle soup into bowls. Garnish with chives. Prep Time: 5 minutes Cook Time: 25 minutes Makes: 4 servings If you like ham and cheese sandwiches, you'll love this soup.
