Fiery Thai Style Pizza

Ingredients:


---sauce

3/4 cup rice vinegar

1/4 cup brown sugar

1/4 cup soy sauce

3 tablespoons water

2 tablespoons peanut butter

1 tablespoons fresh ginger -- peeled and minced

1/2 teaspoon crushed red pepper

4 cloves garlic

1 spray vegetable cooking spray

8 ounces boned and skinned chicken breast halves -- cut into

1/4 cup green onion -- sliced

1/2 cup swiss cheese -- shredded

1/4 cup part-skim mozzarella cheese -- shredded

1 crust pizza crust 12 inch
 

Preparation / Directions:


Combine sauce ingredients and set aside. Coat a large non-stick skillet with cooking spray and saute chicken over medium high heat for 3 minutes. Remove from skillet and set aside. Pour sauce into the skillet, bring to a boil, and cook for 10 minutes or until mixture is reduced by half. Return chicken to skillet, add onions and cook for 2 minutes. Remove from heat. Sprinkle cheeses over pizza crust and top with chicken mixture. Bake pizza at 500 degrees for 10 to 12 minutes or until brown and cooked in the center.
