Ingredients:

1 spray Wesson No-Stick Cooking Spray

2 cups mushroom slices

1 medium zucchini -- cut in half lengthwise and sliced

1 large garlic clove -- minced

1 cup dried plum tomatoes

1 teaspoon oregano -- crushed

1/4 cup Pasta Sauce

1 cup Shredded Pizza Cheese -- (4 oz)

Preparation / Directions:

1. Spray medium skillet with vegetable oil spray. Cook mushrooms, zucchini, and garlic over medium heat until crisp-tender. Stir in tomatoes, oregano, and red pepper flakes. 2. Place pita breads on cookie sheet; bake at 350 F for 5 minutes. Spread 1 tablespoon pasta sauce on each pita bread; sprinkle each with 1/4 cup pizza cheese. Top with vegetable mixture. Bake for 10-12 minutes, or until cheese is melted. Tip: Bake pizzas at 350 F, rather than at a higher temperature, to keep cheese moist. It may be necessary to add 5 minutes or more to baking time. To promote melting and to keep cheese moist, place the cheese on the tomato sauce first, topping with moist ingredients, such as tomato slices or sauteed vegetables.
