Barley Mushroom Pilaf 1

Ingredients:

1 pound mushrooms -- sliced
3/4 cup margarine or butter
2 cups medium barley
4 cups rich chicken broth
1 teaspoon salt
1/4 teaspoon pepper
 

Preparation / Directions:

Heat 4 tablespoons of butter in skillet. Saute mushrooms gently for 6 minutes; remove mushrooms. Add remaining butter and cook onions until soft, about 5 minutes. Add barley and cook until lightly browned, stirring frequently. Add mushrooms and 2 cups of broth to barley. Add the salt and pepper. Turn onto a greased or sprayed with Pam casserole. Cover and bake in 350 degrees oven for 30 minutes. Add 2 more cups of broth and bake, covered, for 1 1/2 hours. Remove cover and bake 30 minutes longer. D
