Barley Pea Pilaf

Ingredients:


1 medium Onion -- sliced

3 tablespoons oil

1 cup barley

3 cups broth

1 package frozen green peas -- (10 oz.)

1 pieces covered 2 1/2-quart casserole
 

Preparation / Directions:


Saute onion in oil. Stir in barley; cook until light brown. Add broth and heat to boiling. Cover and bake at 350 degrees for 35 to 40 minutes or until barley is nearly tender. Stir in peas. Cover and bake 10 minutes. Add more broth if dry. Season with salt and pepper.
