Southern Banana Cream Pie

Ingredients:


1/2 cup sugar

2 tablespoons cornstarch

3 tablespoons flour -- all-purpose

1/8 teaspoon salt

2 cups milk

4 large egg yolks -- slightly beaten

1 tablespoon butter

1/2 teaspoon vanilla extract

2 large bananas

1 crust pie shell -- baked 9 inch

4 large egg whites

1/4 cup sugar
 

Preparation / Directions:


Directions This pie has a rich and creamy taste that children and adults love. Combine sugar, cornstarch, flour and salt in top of double boiler. Add milk slowly, mixing thoroughly. Cook over boiling water until thickened, stirring constantly. Stir some of the mixture into egg yolks then pour back into the double boiler while beating vigorously with a wire whisk. Cook 1 more minute, stirring constantly. Add butter and vanilla then cook 1 more minute while stirring constantly. Cool filling slightly. Peel and slice bananas into pie shell. Pour filling over bananas. Beat egg whites until soft peaks form. Add sugar gradually and beat until stiff, but not dry peaks form. Top pie with the meringue, being sure to seal to edges. Brown the meringue under a broiler, watching carefully. Cool then refrigerate.
