Sourdough Cherry Cobbler

Ingredients:


1 can cherry pie filling -- (1 lb. 5 oz.)

1/2 cup white raisins

1/4 cup sourdough starter

3/4 cup white flour

1/2 cup brown sugar

1/2 cup granulated sugar

1/4 cup butter

1/2 cup chopped pecans
 

Preparation / Directions:


1. Grease an 8-inch round pie plate or cake pan. Put in the cherry filling and scatter raisins evenly over top of the cherries. Bring the sourdough starter to room temperature. When it is active and bubbling you can begin to mix the cobbler topping. Sift together the dry ingredients and cut in the butter until the mixture resembles coarse meal. Stir in the starter and the pecans. Mix thoroughly but lightly. Spoon the starter mixture over the top of the cherry filling, working in circles from the outer edges of the pan so that you end up with a small uncovered circle in the center.

2. Bake in a preheated 425F oven for 25 minutes, or until the top is lightly browned and the cherry filling is bubbling up through the center. Serve barely warm with vanilla ice cream on top.
