Mother's Strawberry Pie

Ingredients:


1 crust baked pie crust

1 cup sugar

3 tablespoons strawberry jello -- (undissolved)

3 tablespoons cornstarch

1/4 cup cold water

1 cup boiling water

3 drops red food coloring

1 tablespoon butter -- or margarine

1 teaspoon lemon juice

1 quart strawberries -- washed and stemmed

1 package whipped cream -- (optional)
 

Preparation / Directions:


Mix sugar, Jello, cornstarch and cold water in a saucepan forming a paste. Add 1 cup boiling water and a dash of food coloring. Cook over medium heat until it lightly thickens. Remove from heat; add butter and lemon juice. Allow mixture to cool. Add strawberries. Pour into prepared pie shell. Do not refrigerate. Top with whipped cream just before serving. Serves: 6-8. Easy. Preparation: 30 min. Cooking: 5 min.
