Leek Pie

Ingredients:


10 Cups chopped leeks*

1 Bunch scallions -- chopped

1 cup chopped onion

2 Cloves minced garlic

2 Tablespoons olive oil

2 Tablespoons butter

1 Teaspoon salt

2 Tablespoons chopped parsley

2 Tablespoons chopped dill

1 1/2 Cups crumbled feta cheese

3 Large eggs -- lightly beaten

1 Pound phyllo

1 1/2 Sticks butter for brushing phyllo
 

Preparation / Directions:


* (about 4-5 large ones) use white and light green parts Preheat oven 350 degrees. Combine leeks, scallions, onion and garlic and cook in olive oil and butter until soft and almost tender. Add salt, parsley and dill. Remove from heat. Add feta and eggs In a buttered 12 x 17 x 2 inch pan (approximately), make a base of 4 sheet of phyllo brushing each sheet with butter. Tot with cooled lee filling and pat evenly down. Top with 10 sheet of buttered phyllo. Lightly score top layers into serving sizes. Bake 30-40 minutes in a preheated oven. or until crust is golden brown. Remove from oven and allow to sit about 15 minutes before slicing and serving.
