Fast Fruit Cobbler

Ingredients:


4 cups apples or peaches or nectarines -- peeled and sliced

1/2 cup granulated sugar

1 tablespoon plus 2/3 cup all-purpose biscuit mix

1/2 teaspoon all-purpose baking spice or

1/2 teaspoon ground cinnamon

2 tablespoons brown sugar -- firmly packed

1/4 cup margarine or vegetable shortening -- preferable butter flavor crisco

2 tablespoons milk
 

Preparation / Directions:


Combine fruit, granulated sugar, q tbsp biscuit mix, 1/2 tsp spice in a bowl, then spoon into shallow, well-greased 1-quart casserole. Using same bowl, combine remaining 2/3 cup biscuit mix with brown sugar. Cut in shortening with 2 knives until mixture is size of small peas. Stir in milk until moistened. Drop by teaspoonfuls onto fruit mixture. Bake in preheated 400 oven for 30 minutes or until toothpick inserted into crust comes out clean. Let stand 5 minutes.
