Preparation / Directions:
1. Soften gelatin in 1/4 cup cold water; pour 1 cup boiling water over softened gelatin, stirring until dissolved.
2. Add and stir in sugar, cranberry juice cocktail concentrate and lemon juice; refrigerate, stirring often, until mixture mounds when dropped from spoon.
3 In small bowl of electric mixer, mix together cream cheese, confectioners' sugar, vanilla and salt until smooth.
4. Gradually blend in cream; beat at high speed until thick and creamy.
5. Fold cranberry mixture into cheese mixture, mixing until evenly blended.
6. Turn into baked pie shell; refrigerate until set.
7. Decorate with whipped cream and grated chocolate, if desire
