Banana Cream Pie - Judy

Ingredients:


1/2 cup sugar

6 tablespoons all purpose ftour

1/4 teaspoon salt

2 1/2 cups milk

1 large egg

1 tablespoon margarine or butter

1/2 teaspoon lemon extract

2 medium ripe bananas

1 crust pie shell baked 9 inch

1/2 cup shredded coconut

1/2 cup heavy cream -- whipped
 

Preparation / Directions:


Preheat oven to 350 degrees. Mix the sugar, flour and salt in top of double boiler. Gradually stir in the milk and cook over boiling water until thickened, stirring constantly. Cover, and cook for 10 minutes longer, stirring occasionally. Beat the egg and add a small amount of the hot milk mixture. Add the egg to the double boiler and cook for two minutes over hot, not boiling water, stirring constantly. Remove from heat, and add the margarine and lemon extract. Let cool. Slice two bananas into a baked pie shell. Pour the cooked mixture over bananas at once. Chill for at least one hour. Place coconut in a shallow pan and toast by baking at 350 degrees for 10 minutes or until lightly browned, stirring occasionally. Let cool. Top pie with whipped cream and toasted coconut.
