Pickled Beets

Ingredients:


8 large beets

1 1/2 cups vinegar

2 teaspoons salt

1/2 teaspoon pepper -- freshly ground

2 tablespoons sugar

1 medium Onion -- sliced thin
 

Preparation / Directions:


Scrub the beets well. Place in a saucepan with water to cover. Bring to a boil, cover and cook for 25 minutes. Drain and cool. Peel and slice the beets. Combine the vinegar, salt, pepper, sugar, onions in a bowl or jar. Mix well. Add the beets, basting with the liquid for a few minutes. Cover and let pickle for at least 12 hours before serving. Serve cold.
