Butternut Squash Puff

Ingredients:


3 Cup mashed cooked butternut squash

2 large eggs -- beaten

1/4 Cup half and half

2 tablespoons butter -- melted

1 tablespoons grated orange rind

1/2 teaspoon grated lemon rind

2 tablespoons all-purpose flour

1 tablespoons sugar

1/4 teaspoon salt

1/8 teaspoon pepper

1/4 Cup Pecan halves (optional)
 

Preparation / Directions:


Combine all ingredients except pecans; mix well. Spoon into a greased 1 1/2 qt. casserole; place casserole in a 13 x 9 x 2 inch baking pan. Pour hot water into pan 1/2 inch deep; bake at 350 F for 50 minutes or until set. Garnish with pecan halves, if desired.
