Ingredients:


8 cups green bell pepper

1 pound sliced mushrooms

3 pounds tomato concasse

3/4 cup olive oil

2 tablespoons garlic

16 chops pork chop

1 teaspoon salt

1 teaspoon pepper
 

Preparation / Directions:


heat the oil in a large skillet, over a medium flame add the garlic, heat and stir until lightly browned remove and discard garlic season the chops lightly with salt and pepper add to the skillet and brown well on both sides remove from the pan and set aside add the peppers and mushrooms heat and stir for 2 minutes add the tomatoes-mix well return the chops to the pan cover and place into the oven bake @ 300 degrees for 30-45 minutes, until pork is just done in center remove chops to a heated platter reduce liquid as needed to adjust consistency pour over chops serve hot
