Linguine With Potatoes, Green Beans And Pesto

Ingredients:


2 medium russet potatoes -- peeled, cut into slices

12 ounces linguine

8 ounces green beans -- (8 ounces) trimmed, cut into 2-inch lengths

1/2 cup pesto sauce

1/2 cup parmesan cheese -- shredded
 

Preparation / Directions:


Bring large pot of salted water to boil. Add potatoes. Cook 5 minutes. Add pasta to pot with potatoes. Cook until pasta is almost tender, about 8 minutes. Add green beans to pot. Continue cooking until pasta is tender but still firm to bite, potatoes are tender and green beans are just crisp-tender, about 3 minutes. Drain. Transfer pasta, potatoes and green beans to large bowl. Add pesto and toss to coat. Serve with grated Parmesan cheese. Prep Time: 10 minutes Cook Time: 15 minutes Makes: 4 servings This is a classic combination in the Ligurian region of Italy, but I like it for its simplicity and flavor.
