Lasagna Rolls

Ingredients:


8 pieces lasagna noodles cooked

1 jar pre-made spaghetti sauce

1/4 cup sliced mushrooms

1 dash celery flakes

1 package frozen spinach -- (10 ounce) thawed

1 cup cottage cheese

1 cup freshly grated parmesan cheese

1/4 teaspoon freshly grated nutmeg

1/4 teaspoon salt and ground pepper to taste
 

Preparation / Directions:


Preheat oven to 400 degrees. In skillet with oil on medium-high heat, add spaghetti sauce, mushrooms and celery flakes. Simmer. In another bowl, mix together spinach, cottage cheese, Parmesan, nutmeg, salt and pepper. Drain lasagna noodles. Lay noodles on a flat surface. Spread spinach mixture down middle of noodle roll-up and lay in pan. Place logs in casserole dish. Spoon spaghetti sauce from skillet over individual logs. Cook until heated throughout. Serve warm sprinkled with additional Parmesan. Approximately 23 minutes.
