Fettuccine Carbonara

Ingredients:


8 ounces uncooked pasta -- fettuccine

3/4 cup evaporated skim milk

1/2 cup nonfat cottage cheese

1/4 cup egg beaters or 99% egg substitute

4 ounces canadian bacon -- chopped

1 cup frozen green peas

2 tablespoons grated nonfat parmesan

1 teaspoon freshly ground black pepper
 

Preparation / Directions:


1. Cook and drain pasta, return to sauce pan. 2. Place skim milk, cottage cheese and egg product in blender or food processor until smooth. 3. Pour mixture over pasta. 4. Add bacon, peas, and parmesan cheese. 5. Cook over Low heat about 3 to 4 min. Stirring constantly, until sauce thickens, sprinkle with black pepper. Serving size (1/6 recipe)
