Ingredients:


2 tablespoons butter

3 cloves garlic minced

1 teaspoon oregano

1 teaspoon rosemary

1 small onion -- chopped

16 ounces Italian plum tomatoes chopped (save liquid)

1/2 cup Absolut Pepper vodka

1/2 teaspoon cayenne pepper (optional)

3/4 cup half-and-half

1 cup fresh grated Parmesan cheese

3/4 pound cooked fresh linguine (or substitute 8 ounces dried linguine cooked according to the package instructions)

1 bunch Parsley
 

Preparation / Directions:


In a large skillet, melt the butter over medium heat. Saute the garlic, oregano, thyme, rosemary and onion for about 5 minutes. Add the tomatoes and their liquid and simmer for about 10 minutes, stirring 3 to 4 times. Add the vodka (and cayenne, if desired) and simmer for about 5 minutes. Add the half-and-half, and half of the Parmesan cheese. Simmer for about 4 minutes, or until the sauce thickens lightly. Add the linguine and stir until the sauce coats the pasta. Garnish with parsley and sprinkle the remaining Parmesan on top to taste. Heat Scale: Mild without the cayenne, medium with it.
