Penne Pasta Salad With Vegetables

Ingredients:


12 ounces penne or ziti pasta

2/3 cup wish-bone chunky blue cheese dressing

2 teaspoons cider vinegar or white vinegar

1/2 teaspoon salt

1/8 teaspoon ground black pepper

1 tablespoons chopped fresh parsley -- (optional)

1 medium red or yellow bell pepper -- cut into thin strips

1 medium zucchini -- halved lengthwise and cut into thin slices

1/4 cup thinly sliced red onion
 

Preparation / Directions:


Cook pasta according to package directions. Drain and rinse with cold water until completely cool. In large bowl, combine blue cheese dressing, vinegar, salt, pepper and parsley. Toss with macaroni and vegetables. Serve at room temperature or chill.
