Preparation / Directions:
Heat oven to 425 degrees. In 9" pie pan, melt 1 tablespoon butter in oven. Meanwhile, in small bowl, stir together flour, milk, eggs, and 1/4 teaspoon salt. Pour into pie pan with melted butter. Bake for 12 to 15 minutes or until golden brown. Meanwhile, in skillet, melt 2 tablespoons butter. Add remaining ingredients except cheese. Cook over medium heat, until vegetables are crisply tender. Sprinkle 1/2 cup cheese in bottom of pancake, top with vegetable mix. sprinkle with remaining cup of cheese. Return to oven, continue baking 5 to 7 minutes or until cheese is melted.
