Yogurt pancakes

Ingredients:


1 large egg

1 cup flour

1/4 cup sugar

1/2 teaspoon salt

1/3 cup yogurt

1/2 cup skim milk

1/2 teaspoon baking soda
 

Preparation / Directions:


Mix 1 egg, 1 cup flour, 1/4 cup sugar, 1/2 tsp. salt , 1/3 cup of yogurt and 1/2 cup of skim milk. Then add 1/2 tsp. baking soda . Spray the griddle with nostick cooking spray and fry to golden brown. Makes about 94 pancakes. Variations I’ve never tried it but if you use fruit flavored yogurt you could have blueberry, strawberry et. pancakes. I usually replace 1/2 the flour with corn meal you can also make them with whole wheat flour. You could also replace the skim milk with buttermilk or dry buttermilk and water for buttermilk pancakes.
