Blueberry Sour Cream Pancakes

Ingredients:


1 Cup flour

1 1/2 Teaspoons baking powder

1 dash salt

1 tablespoons sugar

1 extra large egg

1 Cup milk

1/4 Cup sour cream

2 tablespoons melted butter

1/2 Cup fresh or semi-defrosted frozen blueberries
 

Preparation / Directions:


Garnish: Additional sour cream mixed with brown sugar to taste, sprinkled on blueberries. Pancake Bonanza can also be made with chopped fresh strawberries. Blend dry ingredients. Stir in remaining ingredients, folding in blueberries last. Heat griddle, using 2 tbsp. butter per each large pancake. Ladle in batter in spoonfuls. Cook until underside is brown and edges begin to bubble. Turn over and continue cooking. Serve with brown sugar-sweetened sour cream and blueberries or blueberry syrup.
