Apple-Onion Soup

Ingredients:


2 teaspoons corn oil

2 cups onion

3 cups apple

1 cup celery root

2 cups red potato

16 cups chicken stock

1/4 teaspoon salt

1/4 teaspoon white pepper

2 teaspoons chives
 

Preparation / Directions:


heat oil in a large skillet, over a moderate flame add onions, potatoes, apples, and celery root heat and stir for 6-8 minutes, until onions are well softened add the chicken stock-stir bring to a boil, reduce heat, and simmer for 30-40 minutes until the potatoes, apples, and celery root are tender strain out the vegetables and puree in a food processor return pureed vegetables to the liquid season to taste with salt and white pepper ladle into individual bowls garnish with snipped chives serve hot
