8 tablespoons unsalted butter

2 large onions -- thinly sliced

3 cups cabbage -- thin sliced, packed

2 pounds russet potatoes -- peeled, 1 inch pieces

1/4 cup half and half

2 tablespoons red wine vinegar

1 tablespoon chicken broth -- or water

Transfer to large bowl. Add remaining butter and half and half and mash potatoes. Season with salt and pepper. Mix 1 cup onion mixture into potatoes. Mound potato mixture in shallow casserole.
