Flourless Coconut Macaroon

Ingredients:


11 ounces sweetened shredded coconut

12 ounces granulated coconut *

7 ounces granulated sugar

1/4 teaspoon salt

3 large eggs

1/4 teaspoon vanilla
 

Preparation / Directions:


* To make granulated coconut, dry out on sheet pan 300 degrees for 10 minutes. Put into food processor to simulated granulated coconut. ** Use less sugar approximately 1 to 1 1/2 oz. sugar as granulated coconut us unsweetened. *** use the paddle to mix with on the KitchenAid **** cookies can be preformed and put on cookie sheet and freeze then they can be baked as needed Directions: Mix together first four ingredients. Add eggs and vanilla and mix thoroughly for 2-3 minutes Form into 1 1/2 oz. balls then roughly pinch together making a bell shape. Bake on parchment paper at 300 degrees for approximately 25 minutes When macaroons are cooled dip in dipping chocolate and candied almonds
