Coconut Macaroons

Ingredients:


3 large egg whites

1 cup sugar

1 cup freshly rated coconut

1/2 cup chopped walnuts
 

Preparation / Directions:


Pre-heat oven to 300 degrees f. In the large bowl of an electric mixer, beat the egg whites until frothy. Gradually add the sugar and beat at high speed until stiff and glossy. Fold in the coconut and walnuts. Line a baking sheet with wax paper. Drop the dough onto the baking sheet by the teaspoonful, two inches apart. Bake in a preheated 300-degree f. oven for 25 to 30 minutes, until set and delicately browned. Remove from the oven. Let rest for a few minutes before removing from the baking sheet. Slip off with spatula.
