Mushroom Barley Pilaf

Ingredients:


1/2 cup barley

1 1/2 cups water

1 tablespoon oil

1 medium onion chopped

1 package mushroom -- (10 oz) sliced

2 medium carrots -- grated

1 teaspoon thyme

3/4 teaspoon salt

1/4 teaspoon pepper

1 medium carrot curls and thyme sprig for garnish
 

Preparation / Directions:


*1 - Preferably Olive oil Directions: In saucepan combine barley with 1-1/2 cups water. Over high heat bring to a boil; cover and reduce heat to medium-low. Simmer until tender and all the liquid is absorbed. In skillet heat oil over medium heat . Add onions, mushrooms, carrots, thyme, salt and pepper; cook until tender, 10-12 minutes. In bowl combine barley and mushroom mixture. Garnish. Makes 8 servings
