Mushroom Cassoulets

Ingredients:


1 pound mushrooms -- sliced

1 medium onion -- chopped

1 cup low-sodium chicken broth

1 sprig thyme

1 sprig oregano

1 stalk celery leaves

2 tablespoons lemon juice

1 teaspoon fresh ground pepper

1/2 cup dried bread crumbs

2 tablespoons olive oil
 

Preparation / Directions:


Combine mushrooms, onion, and chicken broth in a saucepan. Tie together thyme, oregano, and celery leaves and add to mushrooms. Add lemon juice and pepper, and bring to a boil. Boil until liquid is reduced, about 10 minutes. Divide mushroom mixture equally into small ramekins. Mix bread crumbs and oil together, and sprinkle on top of each casserole. Bake at 350 degrees for 20 minutes or until tops are golden brown. Remove from heat, and let cool slightly before serving. 6 servings/Serving size: 1/2 cup
