Orange Muffins (Convection Oven)

Ingredients:

2 cups sifted flour
2/3 cup sugar
1 tablespoon baking powder
2/3 cup shortening
1/3 cup soft butter
4 large eggs -- beaten
1/2 cup milk
1/2 cup orange juice
1/2 cup diced orange sections
1/4 cup sliced almonds
 

Preparation / Directions:

Mix flour, sugar and baking powder in large mixing bowl. Add the following ingredients in order and one at a time while stirring, shortening, soft butter, beaten eggs, milk and orange juice. Do not add all at once but one by one gradually. Put batter into greased or paper lined muffin tins filling each tin 2/3 full. Top each with diced orange sections and sliced almonds. Bake in 350 degrees oven for 25 minutes or until done or in a convection oven for 17 minutes.
