2 cups Oat bran muffin mix
3/4 cup Milk
1/3 cup Vegetable oil
1 large Egg
1/2 cup Chopped nuts
1/2 cup Raisins or snipped pitted -- drained Apricots
---Oat bran muffin mix
4 1/4 cups All-purpose flour*
4 cups Oat bran
3 cups Regular or quick-cooking oat
1 cup Sugar
3 tablespoons Baking powder
1 tablespoon Salt

Preparation / Directions:

*if using self-rising flour Decrease baking powder to 1 tb And omit salt. Prepare Oat Bran Muffin Mix. Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups, 2-1/2 X 1-1/4 inches, or line with paper baking cups. Beat all ingredients except Oat Bran Muffin Mix. Stir in Mix just until moistened (batter will be lumpy). Divide batter evenly among muffin cups. Bake about 15 minutes or until golden brown. Immediately remove from pan. OAT BRAN MUFFIN MIX Mix all ingredients in large bowl. Cover, label and store in airtight container at room temperature no longer than 6 months. To Microwave: Prepare batter as directed. Spoon batter into 6 paper baking cups in microwavable muffin ring, filling each three-fourths full. Sprinkle with ground cinnamon. Microwave uncovered on high 2 minutes to 3 minutes 30 seconds, rotating ring 1/4 turn every minute, until wooden pick inserted in center comes out clean (edges of muffins may appear slightly moist). Cool 1 minute; remove from ring. Repeat with remaining batter.
