Quick Blueberry Muffins

Ingredients:


2 cups all-purpose baking mix

1/3 cup granulated sugar

2 tablespoons packed brown sugar

2 teaspoons grated orange peel

1 large egg

2/3 cup nestle carnation evaporated milk

2 tablespoons vegetable oil

1 cup fresh or frozen blueberries -- thawed, drained

2 teaspoons orange juice -- (optional)

2 tablespoons granulated sugar -- (optional)
 

Preparation / Directions:


COMBINE baking mix, granulated sugar, brown sugar and orange peel in large bowl. Beat egg lightly in small bowl; stir in evaporated milk and vegetable oil. Add evaporated milk mixture to baking mix mixture; stir just until moistened. Gently fold in blueberries. SPOON batter into 12 greased or paper-lined muffin cups, filling 3/4 full. Gently brush tops with orange juice and sprinkle with granulated sugar. BAKE in preheated 400ΓΈ F. oven for 15 to 18 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 3 to 4 minutes; remove to wire rack to cool slightly. Serve warm. 12 Muffins.
