Poppy Seed Orange Muffins

Ingredients:


1 1/2 cups unbleached white flour

1 cup whole-wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 large egg

1 large egg white

3 tablespoons orange juice

2 tablespoons poppy seeds

1 teaspoon almond extract

1/2 cup unsweetened applesauce

2 tablespoons canola oil

2 tablespoons sugar
 

Preparation / Directions:


Preheat the oven to 375 degrees. Combine the flours, baking powder, and baking soda in a medium bowl. Set aside. In a large bowl, combine the remaining ingredients. Mix well. Slowly add the dry ingredients to the large bowl and mix until blended. Do not overbeat. Pour the batter into 12 nonstick muffin cups and bake for 20 to 25 minutes. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely. 12 servings/Serving size: 1 muffin
