Poppy Seed Muffins

Ingredients:


1 1/2 cups jiffy baking mix

1/2 cup sugar

1 tablespoon poppy seeds

3/4 cup raisins

1 large egg -- beaten

3/4 cup sour cream

1 teaspoon vanilla
 

Preparation / Directions:


Preheat oven to 400 degrees. Grease 12 muffin cups. Combine baking mix, sugar and poppy seeds; make a well in the center of mixture. Add remaining ingredients, stirring just until moistened. Spoon mixture into muffin cups, filling half full. Bake for about 20 minutes or until done.
