Apple Muffins with Crumb Topping

Ingredients:


---batter

2 cups flour

1/4 cup sugar

1 tablespoon baking powder

1 teaspoon apple pie spice

1 cup skim milk

1 small apple -- cored, pared and shredded

1/4 cup margarine -- melted

1 large egg

---CRUMB TOPPING---

1/4 cup flour

2 tablespoons sugar

1 teaspoon sugar

2 tablespoons butter or margarine -- melted

1/8 teaspoon cinnamon
 

Preparation / Directions:


To Prepare Batter: Line twelve 2 1/2-inch diameter muffin pan cups with paper baking cups and set aside. (I spray the muffin cups with Pam). Preheat oven to 400 degrees. In mixing bowl combine first 4 ingredients. In 2-cup measure or bowl combine milk, appple, margarine, and egg; pour into dry ingredients and stir until combined (do not overmix; batter should be lumpy). Fill each baking cup with an equal amount of batter (each will be about 2/3 full). To Prepare Topping: In small bowl combine all ingredients for topping, stirring until thoroughly combined; sprinkle an equal amount of topping over each muffin and bake for 15-20 minutes (until muffins are golden brown and a toothpick, inserted in center, comes out dry). Remove muffins to wire rack and let cool.
