Ingredients:


1 medium eggplant -- (scrubbed/cubed)

1 medium zucchini -- (unpeeled/cubed) or2

1 medium potato -- peeled/cubed

1 medium green pepper -- cubed

2 stalks celery -- (cut in 2 inch pieces)

1 medium onion -- chopped

2 cups marinara sauce -- (2 to 3)

1 clove garlic
 

Preparation / Directions:


Heat Marinara sauce, add the potato and celery. Cook 15 minutes, then add the zucchini, pepper, onion and garlic. Cook until tender about 15-20 minutes longer.
