MEXICAN RICE MORSELS

Ingredients:


2 cups Cooked brown or regular long -- Grain rice

1/2 cup All-purpose flour

1/2 teaspoon Salt

1/4 teaspoon Pepper

2 large eggs -- beaten

2 Ounces monterey jack cheese

2 medium jalapeno chilies

3/4 cup Crushed tortilla chips -- (about 3 cups)

1 cup Vegetable oil
 

Preparation / Directions:


Mix rice, flour, salt, pepper and eggs. Cut cheese into twenty-four 1/2-inch cubes. With wet hands, shape about 1 tablespoon rice mixture around each cheese cube. Roll rice balls in tortilla chips.Heat oil (2 to 3 inches) in deep fryer or Dutch oven to 375 degrees. Fry rice morsels 4 to 6 at a time 3 to 3-1/2minutes or until golden brown. Remove with slotted spoon. Drain on paper towels; keep warm. Repeat with remaining rice balls. Serve with salsa, guacamole and sour cream if desired.
