Pork Sausage (Convection Oven)

Ingredients:


5 pounds ground pork

1 teaspoon garlic powder

2 tablespoons sage

2 1/3 tablespoons black pepper

1 tablespoon salt

2 tablespoons paprika
 

Preparation / Directions:


Thaw ground pork. Blend all ingredients thoroughly. (Do not put in mixer.) Chill to maintain 38 degrees to 40 degrees internal temperature. Use full No. 30 scoop and measure meat mixture onto ungreased sheet pan. Shape into flat sausage patties approximately 3/8-inch thick. Cook at 350 degrees in convection oven 10 to 15 minutes until sausage is done. (Internal temperature 170 degrees.) Do not refreeze raw sausage patty.
